A delicious middle-of-the-week meal that you can have on the table in less than 30 minutes!

Green Chile Chicken

Green Chile Chicken

Ingredients:
Ingredients1 tablespoon olive oil
1½ lbs. chicken breasts, cut into small pieces
14.5 oz. can diced tomatoes, drained
4.5 oz. can chopped green chiles
½ teaspoon dried oregano
½ teaspoon cumin powder
½ teaspoon garlic powder
Salt and pepper

Instructions:

  1. Gather ingredients. Heat olive oil in saucepan over medium heat. When hot, add chicken and cook until done and browned.

  1. Add tomatoes and green chiles and stir well. Add spices and season with salt and pepper. Cook until heated through. Adjust seasonings if desired.

  1. Serve plain, top with shredded cheese and a dollop of sour cream, or roll up in a flour tortilla!

  • The photos for this recipe and last week’s have even more color problems than usual! Please, please, please use the Safari web browser to view these projects and see these pictures as they’re supposed to be seen!

    Any other browser (so far) ruins the colors, in much the way that the four photos on this test page look different, with some of them looking washed out.

    The Green Chile Chicken and the Blueberry Cream Cheese Strudel should look vibrant and beautiful, but using a browser that doesn’t support color profiles, they look unappealing. Please, just try Safari!

    I made this today and it was SOOOOO good!!! The only difference was that I had some chicken that I had roasted in the oven a few days before. I warmed that in the pan (in bite sized pieces) with a little s&p and then followed your directions. With homemade tortillas, pinto beans and a salad, my family was QUITE happy today!!

    Thank you for sharing this! It will definitely be on my table again!
