Chocolatey Butterscotch Marshmallow Bars

A medley of chocolate, butterscotch and marshmallow makes for delicious and rich cookie bar. Perfect for a picnic lunch!
Chocolatey Butterscotch Marshmallow Bars
Ingredients:
1 cup butterscotch chips
½ cup butter
1 ½ cups flour
½ cup brown sugar
2 teaspoons baking powder
½ teaspoon salt
1 teaspoon vanilla
2 eggs
2 cups miniature marshmallows
1 ½ cups semi-sweet chocolate chips
Instructions:
- Gather ingredients. Preheat oven to 350°F. Grease a 9×13″ baking pan. In a small saucepan over low heat, melt butterscotch chips and butter, stirring often. Set aside in a small bowl to cool.
- In a large bowl, mix flour, brown sugar, baking powder, and salt together. Add butterscotch mixture, eggs, and vanilla. Mix well until smooth.
- Fold in marshmallows and chocolate chips. Pour into greased pan and spread evenly. Bake 22-25 minutes, or until golden brown.
- Cool completely, allowing the marshmallows to set. Cut into bars and enjoy!

That is exactly the recipe I needed right now. I want to make something for Christopher to take with him to the bookstore when he works on Friday.

oh I just went to make them, I bought the ingred. I needed today. I already had the marshmallows. I assembled everything, and was golden up until the marshmallow part, apparently somebody got into them! They are missing!! I freaked out, but wanted to thank unmistakable1 for posting her brownie recipe, after checking it I decided that this recipe would still work even without the marshmallows, though obviously they would not be the same. I’ll let ya know how it works.

They came out good, still can’t wait to try them with the marshmallows next time….LOL

We loved this recipe! I had no plain flour so had to use 100% whole wheat and subbed chocolate chips for the butterscotch and still….wow! I also appreciated how easy this recipe was…I love stir together baking :o) Thanks for a fab afternoon snack!
