Quick Chicken Cacciatore

This is a quick and easy Chicken Cacciatore recipe; you can put dinner on the table within 45 minutes!
Quick Chicken Cacciatore
Serves 4
Ingredients:
1 tablespoon olive oil
4 chicken breasts, cut into strips
1 (14.5 oz.) can diced tomatoes, undrained
1 (8 oz.) can tomato sauce
1 cup chopped onion
1 green pepper, chopped
1 bay leaf
1 teaspoon garlic
1 teaspoon oregano
1 teaspoon parsley
½ teaspoon salt
¼ teaspoon pepper
Instructions:
- Gather ingredients. Heat olive oil in saucepan over medium heat. When hot, add chicken strips, onion, and green pepper. Stir, then cook until chicken is done and vegetables are soft.
- Combine garlic, oregano, parsley, bay leaf, salt, and pepper, and add to mixture. Add tomatoes and tomato sauce, and stir well. Bring to a boil, then reduce heat and simmer, covered, for 20 minutes.
- Remove bay leaf. Serve over rice or pasta.

Looks great!
I am low-carbing, so will probably serve this over “riced” cauliflower or perhaps zucchini ribbons or even spaghetti squash.

That looks like a great change of pace. Wonder if my grandchildren would like it. Over spaghetti squash sounds like a great idea.
