A classic, moist banana bread that is delicious any time of day. For an extra special treat, try it toasted for breakfast!

Makes one loaf

Ingredients:
Ingredients½ cup butter, softened
¾ cup white sugar
2 eggs
1 teaspoon vanilla
3 teaspoons lemon juice
2 cups flour
1 teaspoons baking soda
1 teaspoon salt
1 ¼ cup mashed bananas
½ cup chopped walnuts (optional)

Instructions:

  1. Gather ingredients. Preheat oven to 350°F. Grease a loaf pan. In the bowl of an electric mixer, cream the butter and sugar until smooth. Beat in the eggs, lemon juice, and vanilla.

  1. Mash bananas and measure out 1 ¼ cup, then add mashed bananas to mixture. Add walnuts if desired.

  1. In a medium bowl, stir the flour, baking soda, and salt together. Add the dry mixture to the butter mixture and mix until smooth

  1. Pour mixture into loaf pan and bake 50-60 minutes, or until toothpick inserted in the center of the loaf comes out clean.

  1. Cool 10 minutes, then turn loaf out onto rack to cool. Slice and serve with butter.

  • I wanted to let you know that we tried the recipe you’ve written here. The entire house smells just wonderful! Thank you for all the hard work you’ve put in taking pictures and writing the recipe for us. It smells as wonderful as it looks here (we are waiting for it to cool so we can eat it, otherwise I’d tell you how good it tastes! ;P)
