Gingerbread Pancakes

Let the spicy scent of these Gingerbread Pancakes fill your kitchen and warm you up on a cold winter’s morning.
Gingerbread Pancakes
Ingredients:
2 ¼ cups flour
¼ cup brown sugar
1 ½ teaspoons cinnamon
2 teaspoons ginger
¼ teaspoon cloves
1 tablespoon baking powder
1 teaspoon salt
2 eggs
¼ cup vegetable oil
¼ cup molasses
2 cups buttermilk
Instructions:
- Combine flour, brown sugar, cinnamon, ginger, cloves, baking soda, and salt in large bowl. Stir well to combine.
- In a separate bowl, beat eggs. Stir in oil and molasses. Add buttermilk. Mix well.
- Combine wet and dry ingredients and stir until just combined. Batter will be lumpy.
- Heat lightly oiled skillet on medium heat. Pour about ¼ cup of batter onto skillet.
- Cook until pancakes have a bubbly surface or until bottom is golden brown. Turn once and finish cooking pancakes.
- Serve hot with butter and maple syrup!

Aunt Gussies restaurant in Grand Bend, ON serves these and they are to die for - your recipe is so close, I can’t get over it! Thank you soooooooooooo much! I once drove 3 hours out of my way for Aunt Gussies and now we can have them at home! She serves them with warm apple sauce! MMMMmmmm!
