Just in time for your Thanksgiving menu, this dessert is a spicy pumpkin cake rolled with a sweet creamy filling, beautiful as well as delicious!

Ingredients:

Ingredients2/3 cup pumpkin
3 eggs
1 teaspoon lemon juice
1 cup sugar
¾ cup flour
1 teaspoon baking powder
½ teaspoon salt
1 teaspoon cinnamon
½ teaspoon ginger
¼ teaspoon nutmeg
¼ teaspoon ground cloves

8 oounces cream cheese
1 cup confectioner’s powdered sugar
4 tablespoons butter
1 teaspoon vanilla extract

Instructions:

  1. Preheat oven to 375°. Grease and flour a 9×13″ pan or larger cookie sheet with edges.

  1. Mix dry ingredients (sugar, flour, baking powder, salt, and spices) in a large bowl.

  1. Mix wet ingredients (pumpkin, eggs, and lemon juice) and stir in dry ingredients.

  1. Pour mixture into pan and spread evenly.

  1. Bake for 12-15 minutes, or until cake springs back when lightly touched.

  1. Lay out a towel, heavily sprinkled with confectioner’s powdered sugar, and turn out cake onto it.

  1. Roll cake and towel up together and let cool for 20 minutes.

  1. While waiting, mix cream cheese, powdered sugar, butter, and vanilla to make icing.

  1. Unroll cake, spread icing to within one inch of edges. Reroll cake without towel and wrap with plastic wrap. Refrigerate or freeze roll for at least one hour, up to two weeks.

  1. Unwrap and cut just before serving. Dust with extra confectioner’s sugar if desired.

    I just want to say I love this site and made the pumpkin roll for Thanksgiving dessert. I have never made any type of rolled dessert before and with the step by step instructions and photos it made my transition into dessert roll baking a breeze.
