Baked Acorn Squash

A sweet and buttery side dish to make for an Autumn dinner.
Baked Acorn Squash
Ingredients:
1 Acorn squash
1 tablespoon butter
2 tablespoons brown sugar
Salt and pepper
Instructions:
- Preheat oven to 375°. Cut acorn squash in half and scrape out the seeds with a large spoon. Position upright in a baking dish.
- In each half, place ½ tablespoon butter and 1 tablespoon brown sugar. Sprinkle with salt and pepper.
- Bake for 45-60 minutes or until tender when pricked with a fork. Spoon extra syrup from center of squash over edges. Slice into large wedges and serve.

Oh.. I almost forgot. I always cut a thin flat spot in the middle of the uncut side of each half, so they will sit level in the pan. Then they don’t roll around or tip over and spill out all the good stuff.

I grew up on this side dish. My mom always put red hots (the little candies) in them with the brown sugar and butter. YUMMY!!!
